When not covered in buttercream, Ellyn can be found snuggling with her lop-eared bun named Lyle, chasing a good sprint, and sipping Negronis with her loved ones (preferably under the sun or on a beach).

Whether from her Gran, who instilled a whimsical Scot-English dialect while attempting to make lollipops, or from her Pennsylvania-based Grandma, who was renowned for her myriad cookie recipes, Fat Rabbit Owner Ellyn Hopper was brought up in a familial household unified by food and communing. 

By way of her chef dad and host queen mom, Ellyn’s ongoing need to create has transformed into the cake-centric business she runs today, with a focus on quality ingredients, precise methods, and creative combinations.

After four years at the University of South Carolina, Ellyn left with a Bachelor’s Degree in Art History, a Minor in Hospitality Management, and notebooks full of recipes. Influenced by a semester living in Italy, she believes that cake (and, really, all things sweet) should be a heavenly mixture of nostalgia and palatable intrigue.

With her first wedding cake under her belt by age 21, the future was clear. Working her way from Southern catering to French-style patisserie, Ellyn’s latest ventures have included leading the pastry teams at Richmond staples WPA Church Hill and Stella’s Grocery.

Through both experience and inspiration, Ellyn now pioneers her brainchild of a business with the belief that any occasion is cake-worthy and ought to be treated as such. Be it a wedding, family dinner, or a normal weekday, Fat Rabbit endeavors to bring joy to any gathering.


Through cake, of course.
